Undhiyu is a spicy vegetable dish from Gujarat (India). It is made by mixing a lot of seasonable vegetable in oil and topped with garlic, ginger, chilli pepper, sugar and Indian spices. The vegetables are slow cooked for a long time and little water is added to make sure the vegetables get cooked.

The traditional recipe is made in earthen pot called Matlu. The word Undhu means upside down.
